In this story:

The Vikings have replaced one undrafted rookie OT from a small school with another. They've signed Chim Okorafor from NAIA Benedictine College and waived Jacky Chen from D-II Pace University.

GM Kwesi Adofo-Mensah continues to be active in cycling through players at the bottom of the roster to give someone new a chance to compete for a job. Since training camp began, the Vikings have signed Christian DiLauro, Jarrid Williams, Abram Smith, N'Keal Harry, Jacob Copeland, and Tanner Vallejo.

Okorafor is the latest name on that list. The 6'6", 320-pound tackle was an NAIA All-American last year at Benedictine, which is located about an hour from Kansas City. The California native's college journey also took him to Cal Poly Pomona (where he played basketball, not football), Riverside City Community College, Missouri Southern State University, and Pittsburg State. Six years, five schools, and two sports.

Okorafor signed with the Eagles as a UDFA this year but was waived last week.

Chen was part of the Vikings' undrafted class this year as a longshot out of Pace University in New York City. His parents immigrated to the U.S. from China and he started playing football as a sophomore in high school.

The Vikings didn't see a role on their team for Chen, so now they'll give Okorafor a look. He'll be competing with players like DiLauro, Williams, and Jack Snyder for a spot on the practice squad.
