How Will Giants' Offensive Strategy Change with Tommy DeVito at Quarterback?

Coaches always say, "Next man up!" when an injury occurs. And while that is true to a degree, what's not necessarily true all the time is that the next man up has a skill set equivalent to the guy he's replacing.
This Sunday, the New York Giants are calling on their next man up at quarterback, undrafted rookie Tommy DeVito, who will make his first NFL start. How much might the offensive philosophies change with DeVito under center?
In the latest Locked On Giants podcast, we asked Tony Racioppi, DeVito's pre-draft and off-season trainer, what he thought might happen. Here's what he said:
Great question, and listen, that's really good to want to know what the quarterback is comfortable with, and I appreciate those guys doing that because sometimes in that profession, it's 'Here's my offense, here are my plays and you better run them.' So, it's getting a feel for what the quarterback likes.
I think Tommy likes getting the ball out quickly, which is good. I think Tommy gets his feet set quickly and throws stuff under 22 yards. I'm not trying to say that he can't throw a deep ball, but he does a great job of processing information. Seeing the coverage throw to the open guy on time, And that's his game, that's his strength, and I think that's a good strength to have.
So I could see a lot of RPO stuff, especially early in the game. If (the Cowboys) play man-to-man, if things break down, he can take off and pick up first downs. I think that's something to see, too, early in the game.
Maybe seeing a Cover 1 or 2 man, if he's able to kind of take off and get first downs, sometimes that stops people from playing man because of that and then obviously makes things a little bit easier for him as far as zone coverage and moving linebackers with his eyes.
